I come from a Brady Bunch-style family with six siblings, two mothers, and two fathers, so when the holidays roll around, there are a lot of mouths to feed. In addition to prepping for the big meal, we gear up to cook for our guests over multiple days with numerous breakfasts, lunches, and dinners.
This year I’m the guest as I’m spending Christmas away from home for the fourth time in as many years, but, never one to miss a chance to cook, I feel the need to keep everyone well fed — even if there are only a fraction of us out here in Hawaii. Never mind the amount of people, I want to cook but I don’t want to slave away so I turn to my favorite make-ahead dishes, like this White Bean, Poblano, and Chicken Chili. There’s nothing fancy to it but it’s a nice change from classic chili and, if you use poblanos, has a spiciness that creeps up on you and is sure to warm you up no matter how frightful the weather gets.
