This month, forager, hunter, and author, Georgia Pellegrini, is here to share her key to the kitchen. Georgia’s food philosophy is rooted in the principles of farm-to-table cooking and, true to the style, her key to the kitchen is all about minimalism and purity.

Speaking of which, her latest book, Girl Hunter: Revolutionizing The Way We Eat One Hunt At A Time, has finally come out in paperback and, for the occasion, we’re doing a giveaway. Q: Georgia, what is your absolute, number one key to the kitchen?

A: My key to the kitchen is minimalism, in both ingredients and equipment. I use a cast iron skillet for almost everything, from baking to frying. I don’t have any cooking equipment in my kitchen that I don’t use regularly, it makes cooking much more effortless when you don’t have to dig through cabinets to get what you need, causing an avalanche in the process.

I feel the same way about ingredients, I’m a proponent of using pure ingredients that are allowed to speak for themselves. If they are high quality they won’t need a lot of extra ingredients with them to make them taste good. The flavor and color of a beautifully roasted heirloom carrot can’t be improved with a bunch of add-ons. Sometimes I have to work a little harder to get those great ingredients, which is why I garden, fish, forage and hunt for them.

I always think–how would my grandmother make this? That is a good barometer when deciding whether to take out a compressed air canister to make parmesan foam.
