Hey, Friends. Today I’ve got a recipe that I shared with the folks over at Attune Foods who are working to raise awareness about the plight of honeybees with The Rodale Institute Honeybee Conservancy Institute. I’m doing my part to spread the word by joining in their Honeybee Project In The Kitchen where we created recipes using Erewhon Honey Grahams and, of course, a good dose of honey.
The minute I think of honeybees, I think of all the amazing work they do in helping keep things pollinated and that makes me think of my favorite of spring produce, like the top-of-the-season strawberries.
I grew up eating tons of lemon bars and I have a love for an amazing lemon curd. I don’t think I ever thought it could be better until I added in some strawberries, toasted pistachios, and a dose of coconut oil for the Honeyed Pink Strawberry Lemonade Bars.
