Last Fridays: Zucchini and Ricotta Salata Bruschetta

Welcome to the first ever Last Fridays here on the site!

I know, it sounds like some sort of art walk but, it’s not. It’s happy hour in digital form —  a virtual cocktail party  – with my food friend, Lillian, me, and, well, you. Are you in? I thought you might be!

Here’s the deal, Lillian’s a coworker and friend and one of my favorite things about her is that she likes cocktails and small bites (almost) as much as I do. But, she’s based in Berkeley so I only see her when I’m up north, which is only a fraction of the time these days. That has put quite a wrench in our QGT or quality girl time, which usually is made up of some combination of chatting each others ears off while we snack, sip, and savor on our lastest creations.

Since we can’t see each other for each and every happy hour, we figured we should make it virtual. So, starting today on the Last Friday of each and every month we’ll meet you here for a little toast. And, being food people, we’ll share our latest cocktail hour creations with you.

I know you don’t yet know Lillian but trust me when I tell you, you’ll be fast friends. Seeing as summer just kicked off, we wanted to give you a pairing you could make for the hot days ahead. So, say hi to Lillian, check out her phenom Zucchini and Ricotta Salata Bruschetta below and then mix up this Lillet Lemonade Cocktail to help wash it down.

Lillian: To go with Aida’s delicious Lillet and Gin Lemonade I thought a crisp bruschetta was in order. This drink calls for a nice light snack that can satisfy a happy hour appetite but are light enough to not fill you up. That way you can keep snacking and chatting like we do. On top of that, they are pretty to serve up.

So, make these with a friend after work. Then kick back, snack & embibe, and let the weekend begin.
