Mini Flatbreads with Delicata Squash and Feta

I just want a robot to brush my teeth and take my makeup off for me. If I were uber rich, I think I’d have someone invent a robot to do just that. Is that weird of me? Is that the precursor to me become super eccentric a la Howard Hughes?

Because, let’s be honest, I probably wouldn’t have it stop at my cosmetic care and would ask the robot to have mini snack ready for me at a moment’s notice, like these Mini Flatbreads with Delicata Squash and Feta — and a glass of white wine, obviously.

A flatbread dough immediately came to mind so I shared these Flatbreads with Delicata Squash and Feta during my cooking classes in Florida last weekend and figured it was time I share them with you too.

Here I’ve topped them with sauteed onions, fresh thyme, feta, and some Delicata Squash. Oh, and you know about delicious Delicata, yes? It’s an itty winter squash with a thin skin — a good thing in this situation because it means you can roast it without peeling it first. And, let’s be real, anytime we can make cooking easier, we should, right?

So, while a cosmetic cleaning cyborg is nowhere near a reality in my life, these flatbreads are very much becoming a delicious habit.
