You guys remember my dear friend, Sarah Copeland? I mean, who could forget the incredible recipes she’s shared here on Pairs Well With Food from her 1000-Layer Chocolate Chip Cookies to her Sour Cherry French Toast? If I could have someone cook for me everyday, it’d likely be Sarah with her easy and contemporary farm-to-table cooking that’s more provacative than precious.
Well, clearly I’m not the only one who’s a fan of her work because her newest cookbook, Feast Cookbook has been nominated for a James Beard Award and I’ve got my fingers and toes crossed that she’ll win. So you can see what the fuss on Feast is all about, I wanted to share the recipe for these Pea Guacamole and Seared Halloumi Soft Tacos.
I wanted to share this because it proves my theory that Sarah is a California girl who got separated from the Golden State at birth. True, her midwest and New York roots are the basis for her cooking but there are these bright as sunshine recipes of hers like these Pea Guacamole and Seared Halloumi Soft Tacos that instantly transport me.
And, let’s be honest: anyone who combines one of my favorite Spring ingredients (peas) with my the unofficial California state ingredient (avocado) for one of my all-time favorite snacks (guacamole) is already a winner to me!
